Roasted Rosemary and Garlic Almonds

Almonds — raw or roasted — make a great snack, whether you’re enjoying them by yourself or serving them at a party. These crunchy treats are an excellent source of fiber, protein, magnesium and vitamin E. What’s more, almonds can reduce blood pressure and lower cholesterol levels.



  • 6 tbsp Rosemary, Dried
  • 5 clove garlic
  • 1 tsp Olive Oil, Extra Virgin
  • 1 1/2 cups Raw Almonds
  • 1/4 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper
  • 1/2 tsp Garlic Powder


1 Preheat oven to 350 degrees Fahrenheit.
2 Soak rosemary sprigs in water.
3 Press 5 garlic cloves into olive oil. Stir and mash into the oil. (If you have time, allow the garlic to infuse the oil for a few hours.) Press the mixture through a sieve and reserve.
4 Spoon olive oil into a large bowl. Add almonds, salt and pepper, then toss until completely coated.
5 Place almonds on a Silpat or parchment paper-lined sheet pan.
6 Top nuts with rosemary sprigs and roast 5 minutes.
7 Remove, mix around to make sure the nuts on the outside and inside get mixed around. Replace in the oven for another 5 minutes.
8 Check the almonds to make sure they are not overcooking. They should be slightly darker, smell nutty and be crackling slightly. If they are, remove. If not, return to the oven for 2 more minutes.
9 Immediately remove almonds from the baking sheet they roasted on and allow to cool.
10 Toss with garlic powder, adjust seasoning and serve.
